My name is KimAnn and I’m a former junk-o-holic! I was an unhealthy pescatarian/vegetarian for decades. I loved my sweet treats and crunchy salty things. Sour cabbage patch kids, Reese’s and Doritos were my main squeezes, but after getting sick and tired of myself and my “drug habit” (because sugar is a hellava drug), I let them go.
The withdrawal was excruciating, abrupt and all of a sudden, but it had to be done. I control my junk food cravings now and not the other way around.
I eat mostly clean food. Most of my “diet” consists of tons of water, veggies, fruits and grains (the rest- Greek yogurt, cheese, eggs or fish). When I made the change, and added 30 minutes of high intensity interval training (HIIT) 4-5 days/week, my body and health responded quickly and dramatically.
After I got “clean,” I lost inches first, then pounds. My face cleared up. I have better mobility in my knees. I no longer wobble (thank the heavens for that!). And the annoying tendonitis in my wrist stopped flaring up during the first month after I cut out the processed junk in packages!
I still have a long way to go to hit my health and fitness goals, but the important thing is- I’m on my way now!
One of the top things that keep me on track is meal prepping. I make simple meals on the weekend for the entire week. The meals have to be filling, nutritious and delicious.
If the taste ain’t poppin’, then my mouth is blockin’! In other words, the flavor level has to make sense to my tastebuds!
The veggies, grains and fruit are the nutritional highlights of my meals, but I try to make the homemade sauces and dressings the jam!
Meal prepping prevents me from making silly, impulsive choices (running to the corner store for treats!) at the end of a weary day. They also keep my pocket book from thinning out.
The money I’ve saved from making my own meals in advance is bananas! And as a result, I can squeeze in a “me time” spa day once a month now, guilt-free!
Sooo… why are we all here? My friends (all carnivores) always ask me for my plant-based recipes after my dinner parties and fiestas. So this is a space where I share simple plant-based recipes, meal prep ideas, some tips and other tricks with friends (and new friends!) who want to get more clean, mostly plant-based meals in their diet.
No worries about food or diet dogma or pressure here. I’m not a vegetarian or vegan “police” kind of gal. So, stay a while and check out some recipes!
